Today I get to reveal my cookie recipe for the Cookies for Kids with Cancer Valentine’s event!
I am so excited and please to be participating to bring awareness and help raise money for this cause.
We are doing this event because we want to make a difference in the fight against pediatric cancer.
Did you know that cancer is the #1 cause of death of children by disease in the U.S.? There are 40,000 U.S. children actively battling cancer right now. With less than 4% of the National Cancer Institute’s budget going to all childhood cancer combined, I knew it was important for me to get involved.
Help us make a difference by donating to Cookies for Kids’ Cancer! Our goal is to raise at least $3000. Because these three companies: Dixie Crystals, Land O’Lakes and Mediavine have each pledged to match our donations raised through this campaign up to $3000!!!
Currently, we have raised: $1,515 we are a little over HALF WAY towards our $3000 goal, will you help us with a donation today? Every little bit helps!
Since it is for Valentine’s Day, I wanted it to be something extra lavish and I think I hit it on the nail with these cookies. These flourless dark chocolate cookies are extremely rich and are great warmed up and served with a scoop of vanilla ice cream and berries. Honestly, one cookie is all you’ll need.
While these are flourless, you will still have a dry mix. Combine the cocoa powder, sugar, and salt all together and mix well.
Now the magic. On a double broiler, add your chocolate chips and butter.
The dark chocolate and butter will melt together creating this glorious and delicious mess.
When the chocolate mixture is completely done, let it cool for a minute while you prepare the dry mix. Place your dry ingredients in a mixing bowl and add two egg whites and your vanilla until it is a creamy consistency. Then add the melted dark chocolate and mix well to combine. Scoop the mix into little balls on a cookie sheet and place in the oven. Bake for about 12 minutes.
This is super important!
When you pull your cookies out of the oven, make sure you let them cool for a good couple of minutes! Because they’re flourless, they will break apart if you pull them off too early. Let them harden a bit on the cookie sheet.
Grab some ice cream and you have an incredible Valentine’s dessert!
On to the recipe!

Thank you Jessica! These were originally going to be sugar free and then their package arrived ;p I think I’ll be making a bunch of these and give them out to people with the Cookies for Kid’s Cancer to bring awareness!
