You have to love the Instant Pot.
No, I’m not one of the Instant Pot groupies (and man does it have groupies), but I do enjoy the ability to make good food in a relatively speedy manner with little involvement from me.
The fact that it’s much safer than the stovetop pressure cookers is also a huge plus. I really have no desire to blow up my kitchen. I also have a Cuisine Art electric pressure cooker, and I love that one also. The reason I use the Instant Pot more is because of the stainless steel pot. The Cuisine Art has a non-stick coating on theirs.
Anyway, I love using the pressure cooker when I’m running low on time or just being lazy. I need to find more recipes for it.
Apple Cider Pork Roast from Great Food Fast!

First, I love apple cider meats. I think I like them more with the “hard cider,” but as alcohol is a no, no right now, I’ll be plenty happy with apple cider juice.
The pork roast is really easy to make. You pretty much brown the meat and sauté the onions, then throw all the ingredients in and hit the timer.
The taste was really good and I really liked the way the apples tasted with the pork. This would go really well with some mashed potatoes and green beans.
So a little bit on my two low ratings…
First, nothing ever really looks good coming out of the pressure cooker (unless its mac n’ cheese)… so I gave the appearance a 3. It’s not UGLY, but it doesn’t look gorgeous either.
Second, the meat wasn’t reaching the tenderness I was looking for. I even went to 90 minutes for the time at the very beginning, ignoring the authors suggested 65 minutes. When I opened it and it was still pretty firm, I put it back in for 20 more minutes. STILL wasn’t where I wanted it after that, so I put it back in again for 30 more minutes.
Finally, it was okay.
