For the Salad
- 1 Fennel Bulb, sliced thin
- 1 Small Red Onion, sliced thin
For the Dressing
- 2 TBSP Olive Oil
- 1 Lemon, juiced
- 1 tsp Lemon Zest
- 1 tsp Dill, minced fine
- Salt & Pepper to taste
Instructions
For the Salad
- In a food processor or with a mandolin, slice the fennel bulb and red onion into thin strips.
- Place into a plastic bag with a seal (Ziploc, etc).
For the Dressing
- Combine all ingredients and mix well with a whisk.
- Pour dressing over the ingredients in the plastic bag, seal, and shake vigorously.
- Chill for up to 30 minutes and serve.
