Chilled Red Onion and Fennel Salad

For the Salad

  • 1 Fennel Bulb, sliced thin
  • 1 Small Red Onion, sliced thin

For the Dressing

  • 2 TBSP Olive Oil
  • 1 Lemon, juiced
  • 1 tsp Lemon Zest
  • 1 tsp Dill, minced fine
  • Salt & Pepper to taste


For the Salad

  1. In a food processor or with a mandolin, slice the fennel bulb and red onion into thin strips.
  2. Place into a plastic bag with a seal (Ziploc, etc).

For the Dressing

  1. Combine all ingredients and mix well with a whisk.
  2. Pour dressing over the ingredients in the plastic bag, seal, and shake vigorously.
  3. Chill for up to 30 minutes and serve.
