Dublin Coddle

Ingredients

  • 1 lb Irish bangers or another form of sausage
  • 1 large onion, sliced into half rings
  • 3 bacon strips, chopped
  • 5 potatoes, peeled and chopped
  • 2 garlic cloves, minced
  • 1 bay leaf
  • 3 cups chicken broth
  • 1 tsp thyme
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Prep all ingredients
  2. Select SAUTE on the Instant Pot and brown your bacon until lightly crispy
  3. Remove some of the grease using a paper towel held by tongs. DO NOT use your hands
  4. Add onions and sauté for one minute. Add garlic and continue to sauté until garlic is fragrant
  5. Remove onions, garlic, and bacon. Set aside
  6. Brown sausages on all sides. If there is not enough fat to properly brown, add a small amount of butter to the Instant Pot
  7. Once sausages are browned, add potatoes, onions, garlic, bacon, spices, and broth to the Instant Pot
  8. Seal the Instant Pot and set to 6 minutes on manual at high pressure
  9. Once timer goes off, perform a quick release using tongs to avoid burning your hands
  10. Mix, adjust with addition salt and pepper if desired
  11. Serve and enjoy!

Notes

  • This dish can also be made in a slow cooker for 8 hours or on the stovetop
