Bacon Wrapped Chicken Stuffed with Jalapeno and Cream Cheese

Ingredients

  • 4 Chicken Thighs (you can also use breasts but I prefer thighs)
  • 2 Jalapenos cut in half and seeded
  • Cream Cheese
  • 48 Slices of Bacon
  • Salt, Pepper, and Seasoning of your choice to taste (I like to add Cajun seasoning)

Instructions

Flatten and season your chicken. You want your chicken to be a consistent size throughout the piece of meat. I added my seasonings on the inside piece of meat since I was smoking it. Feel free to season either side or both if you feel like it.

 

Stuff the jalapenos with cream cheese. You can also use seasoned cream cheese to add extra flavor.

Wrap with one or two slices of bacon and prepare to cook!
I cooked these in my smoker for about an hour, but you can also cook them on the grill or in the oven. If you cook them in the oven you can cook them at 350 degrees for about 30-45 minutes. No matter how you cook them, make sure the internal temperature of the chicken is about 165 degrees.
