Dairy Free Horchata

Description

This dairy-free, Mexican classic is easy to make and filled with cinnamony goodness!  A perfect compliment to a spicy meal.


Ingredients

1 cup of long grained rice

2 cinnamon sticks

5 cups of water

1 tsp vanilla

1/2 c sugar


Instructions

In a blender, add your rice, cinnamon sticks, and water.

Blend until the rice and cinnamon are somewhat ground.

Let this soak for at least 8 hours or overnight. The longer you soak, the better your horchata will be.

After soaking. Blend once more. Using a sieve or cheesecloth, strain the drink into a pitcher removing the rice and cinnamon bits. This is an important step so don’t skip it! You don’t want your drink to taste too chalky or grainy.

Add your sugar and vanilla and stir until combined.

Serve cold and enjoy!
